Quick-Pickled Onions
I hate onions but love pickled onions, so this recipe has become a staple in our kitchen. Plus everything always seems to be more elevated with them — sandwiches, avocado toast, you name it. With just a few ingredients you’ll most likely have on hand, I like to make this in one container to make this a no-mess recipe.
Quick-Pickled Onions
INGREDIENTS:
1 cup water
1/2 cup apple cider vinegar or white wine vinegar
1 Tbsp. sugar
1 1/2 tsp. kosher salt
1 red onion, thinly sliced
DIRECTIONS:
In a pyrex container, whisk together the first 4 ingredients until sugar and salt dissolve.
Add sliced onions to the container.
Let sit at room temperature for 1 hour to soften and marinate. Can be stored in their liquid in the refrigerator for up to 2 weeks
