Meals Of The Week: Week 3

From trimmed asparagus spears and vegan kale pesto to julienned sun-dried tomatoes and chopped kale – why does it feel 10x easier cooking when ingredients come from Trader Joes? Well, these 3 meals for the week can be made entirely from one trip to TJs.

As you’ll see below, a big learning for me this week was timing.

  • One-Skillet Chicken & Pesto Rice (p. 196 What To Cook When You Don’t Feel Like Cooking) – Located in the 1 hour section of this cookbook, I made this when both kids were still awake because I was unsure how long it would actually take. It was chaotic to say the least. There are 10, 15, and 15-minute intervals when you can be hands-off cooking and pop in to help.

  • Sausage & Kale Pasta (p.84 What To Cook When You Don’t Feel Like Cooking) – Figuring 4 quarts of water would take some time to boil, I started cooking the pasta when Wyatt was still awake. Of course, when it was about time to drain it and take it off the stove, he was ready to eat and go to sleep.

  • Cuban-Inspired Mojo Bowls (Mojo Sauce from Bon Appetit) – Inspired by one of my favorite meals I get from Thistle (I love anything with plantains). You’ll need:

    • Rice (frozen to make it even easier)

    • Black Beans

    • Spinach (sauteed)

    • Frozen Sweet Ripe Plantains

    • Carnitas

    • Mojo Sauce
