Meals Of The Week: Week 4
We’ve entered the 3-month sleep regression and have been primarily experiencing it during the day, with skipped naps or contact naps only. So I’ve had less free hands/time and have been less than motivated to figure out what we’re making for dinner for the week. However, I dug through my recipe archive and found two recipes we had most of the ingredients on-hand and just needed to fill in a bit.
Trader Joe’s has everything you need for these recipes, including harissa and white miso paste, which I love because it turns these into pantry staples and makes it feel so much more accessible.

Weekly Menu
Sausage & Pepper Hoagies with Harissa Mayo (Real Simple Magazine June 2024)—subbed pre-cooked unexpected cheddar sausages for the Italian sausage links, used the onion/pepper instructions as a guide, and followed the harissa mayo recipe. I didn’t have sherry vinegar so I Googled a sub (rice wine vinegar).
Miso Mushroom Pasta (Real Simple Magazine November 2024)—big umami bomb. One pot dish, where the hardest part is trying to get the dry pasta noodles to fit into the dutch oven. I subbed gluten-free spaghetti for the fettuccine noodles. We cooked some ground pork on the side and topped for added protein (not pictured).
